- Garlic powder – 1 tsp
- Paprika – ½ tsp
- Olive oil – 2 tbsp (30ml)
- All-purpose flour – 60g (½ cup)
- Eggs – 2, beaten
- Breadcrumbs – 120g (1 cup)
- Grated Parmesan cheese – 40g (⅓ cup)
For the Pasta & Sauce:
- Pasta (penne or rotini) – 350g
- Marinara sauce – 500ml (2 cups)
- Fresh mozzarella – 200g, cubed or shredded
- Parmesan cheese – 50g, grated
- Basil – 10g (handful), chopped
- Olive oil – 1 tbsp (15ml)
- Optional: red pepper flakes – ¼ tsp, for a spicy kick

Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add pasta and cook according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Bread & Cook the Chicken
- In three shallow bowls, set up your breading station: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
- Toss chicken pieces in flour, dip into eggs, and coat thoroughly with breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Cook chicken in batches for 3–4 minutes per side or until golden and cooked through. Remove and set aside.
Step 3: Make the Sauce
- In the same skillet, reduce heat to medium-low and add a splash of olive oil.

- Stir in cooked pasta and toss to coat. Add a splash of reserved pasta water if the sauce is too thick.
Step 4: Combine & Melt Cheese
- Return crispy chicken to the pan, gently folding it into the pasta.

- Cover the skillet for 2–3 minutes or until the cheese melts beautifully.
