  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lime

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing
  • 1 tablespoon chipotle chili powder (or more for extra spice)
  • 1 tablespoon adobo sauce (from a can of chipotle peppers in adobo)
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 tablespoon lime juice

For the Burrito Assembly:

  • 4 large flour tortillas (about 10-inch size)
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 small red onion, thinly sliced
  • 1 cup shredded cheddar cheese or Mexican blend cheese
  • Fresh cilantro for garnish (optional)

1. Marinate the Chicken:

  • In a small bowl, mix together the olive oil, chipotle chili powder, garlic powder, onion powder, cumin, paprika, salt, pepper, and lime juice.
