These Chocolate Covered Strawberry Brownies start with a rich, chewy brownie base, are topped with a layer of fresh strawberries, and finished with a silky chocolate ganache. 🍫 Ingredients

For the Brownie Base:

  • ½ cup (115 g) unsalted butter
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (30 g) unsweetened cocoa powder
  • ½ cup (65 g) all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Strawberry Layer:

  • 1–1½ cups fresh strawberries, hulled and sliced

For the Chocolate Ganache:

  • ½ cup (120 ml) heavy cream
  • 1 cup (175 g) semi-sweet chocolate chips or chopped chocolate

  1. Preheat & prep:
    Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. Make the brownie layer:
    In a saucepan, melt butter. Remove from heat and whisk in sugar, eggs, and vanilla. Stir in cocoa powder, flour, salt, and baking powder until just combined. Spread batter evenly into prepared pan.
  3. Bake the brownies:
    Bake for 20–25 minutes, or until the center is just set and a toothpick comes out with a few moist crumbs. Cool completely.
  4. Add strawberries:
    Once brownies are cool, layer sliced strawberries evenly over the top.
  5. Make the ganache:
    Heat cream in a small saucepan until just simmering. Pour over chocolate chips in a bowl. Let sit 2 minutes, then stir until smooth and glossy.
  6. Top with ganache:
    Pour ganache over strawberries and gently spread to cover. Chill for 1–2 hours until set.
  7. Slice and serve:
    Use a sharp knife (wiped clean between cuts) to slice into squares. Serve chilled or at room temperature.
