These Chocolate Covered Strawberry Brownies start with a dense, fudgy brownie base, followed by a layer of fresh, juicy strawberries, and finished with a glossy chocolate ganache that melts in your mouth.

The contrast of textures — chewy brownie, tender fruit, and smooth ganache — makes each bite feel gourmet. But the best part? They’re easy to make and guaranteed to impress at gatherings, special occasions, or just a night in with a glass of wine.

For the Brownies:

  • 1/2 cup unsalted butter (1 stick), melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

1. Prep & Bake the Brownies

Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

In a bowl, whisk together melted butter and sugar. Add eggs and vanilla; whisk until smooth.

Stir in cocoa powder, flour, salt, and baking powder until just combined. Do not overmix.

Pour batter into prepared pan and spread evenly. Bake for 20–25 minutes, or until a toothpick comes out with a few moist crumbs. Let cool completely.

2. Layer the Strawberries

Once brownies are cooled, layer the halved strawberries cut-side down across the top. Cover the entire surface in a single layer.

3. Make the Ganache

In a small saucepan or microwave-safe bowl, heat heavy cream until steaming (but not boiling). Pour over the chocolate chips and butter. Let sit for 2–3 minutes, then whisk until smooth and glossy.

4. Pour & Set

Carefully pour ganache over the strawberry layer, smoothing gently with a spatula to fully coat the berries. Chill for 1–2 hours or until ganache is set.

5. Slice & Serve

Use the parchment overhang to lift brownies out of the pan. Slice with a warm, sharp knife for clean edges. Enjoy cold or at room temperature!
