A Romantic, Rich, and Fruity Masterpiece

This Chocolate Strawberry Cake is where deep chocolate decadence meets fresh, sweet strawberries — a combination that’s as timeless as it is irresistible. With moist chocolate cake layers, a creamy strawberry filling, and rich chocolate ganache dripping down the sides, this dessert looks and tastes like something out of a high-end bakery.

Perfect for Valentine’s Day, anniversaries, birthdays, or just when you want to impress with something truly special, this cake is both elegant and easy enough for a confident home baker to master. It’s a showstopper that delivers on flavor, texture, and presentation.

???????? Ingredients

For the Chocolate Cake:

  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup hot brewed coffee (or more water for milder flavor)

For the Strawberry Filling:

  • 1½ cups chopped fresh strawberries
  • 3 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

For the Strawberry Buttercream:

  • 1 cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ⅓ cup strawberry puree (made from fresh or frozen strawberries)
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Ganache:

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Optional Garnishes:

  • Whole strawberries (with stems)
  • Chocolate shavings
  • Edible gold dust or sprinkles

???? Instructions

Step 1: Bake the Chocolate Cake Layers

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Stir in boiling water and hot coffee (the batter will be thin — that’s good!).
  5. Pour evenly into prepared pans and bake for 30–35 minutes, or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then remove from pans and let cool completely on wire racks.

Step 2: Make the Strawberry Filling

  1. In a saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook until berries begin to release juice (about 5 minutes).
  2. Stir in the cornstarch slurry and cook until thickened (2–3 minutes).
  3. Let cool completely before using.

Step 3: Prepare the Strawberry Buttercream

  1. Beat butter until light and fluffy.
  2. Gradually add powdered sugar, beating well after each addition.
  3. Add strawberry puree, vanilla, and salt. Beat until creamy and smooth.

Step 4: Make the Ganache

  1. Heat heavy cream in a small saucepan until just simmering.
  2. Pour over chocolate chips in a heatproof bowl and let sit 2–3 minutes.
  3. Stir until smooth and glossy. Let cool to a pourable consistency.

Step 5: Assemble the Cake

  1. Place one cake layer on a serving plate. Pipe a ring of buttercream around the edge and fill the center with strawberry filling.
  2. Add the second cake layer and frost the top and sides with strawberry buttercream.
  3. Pour ganache over the top, letting it drip down the sides.
  4. Garnish with whole strawberries or any toppings of your choice.

???? Pro Tips & Tricks

  • Use room-temperature ingredients for a smoother batter and even baking.
  • Make the cake layers a day ahead and chill for easier assembly.
  • Don’t overfill with strawberry filling — a little goes a long way to avoid slippage.
  • Want to intensify the strawberry flavor? Add chopped freeze-dried strawberries to the buttercream!
  • For extra shine, brush your whole strawberries with a little warm jam before garnishing.
