Ingredients

For the Cookies:

  • 200g all-purpose flour
  • 30g unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 115g unsalted butter, softened
  • 120g granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

For the Chocolate Filling:

  • 100g dark chocolate (at least 60% cocoa), finely chopped
  • 50ml heavy cream
  • 10g unsalted butter

Instructions

Step 1: Prepare the Dough

  1. In a bowl, whisk together flour, cocoa powder, salt, and baking powder. Set aside.
  2. In a separate large bowl, beat the butter and sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg yolk, vanilla extract, and milk, then mix until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  5. Cover the dough with plastic wrap and refrigerate for 30 minutes (this helps the cookies hold their shape).

Step 2: Shape the Cookies

  1. Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. Roll the chilled dough into small balls (about 15g each) and place them on the baking sheet, leaving space between each.
  3. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.

Step 3: Bake the Cookies

  1. Bake for 10-12 minutes until the edges are set. If the indentations puff up during baking, gently press them again with a spoon while still warm.
  2. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 4: Prepare the Chocolate Filling

  1. In a small saucepan, heat the heavy cream until warm (do not boil).
  2. Pour it over the chopped chocolate and let it sit for 1 minute.
  3. Stir until smooth, then mix in the butter for extra shine.

Step 5: Fill the Cookies

  1. Spoon or pipe the chocolate ganache into the indentations of each cookie.
  2. Let them sit for 30 minutes to allow the filling to set.
