Instructions

Step 1: Prepare the Salad

  1. Wash and dry the mixed salad greens thoroughly. Place them in a large serving bowl.
  2. Thinly slice the apple and red onion. Toast the nuts in a dry pan over medium heat for about 2 minutes, stirring frequently until fragrant. Let them cool.
  3. Scatter the pomegranate seeds, dried cranberries, crumbled feta, sliced apple, red onion, and toasted nuts over the greens.

Step 2: Make the Honey Mustard Dressing

  1. In a small bowl or jar, whisk together the olive oil, Dijon mustard, honey, apple cider vinegar, and minced garlic until smooth and emulsified.
  2. Season with salt and black pepper to taste. Adjust sweetness or acidity as needed by adding more honey or vinegar.

Step 3: Assemble and Serve

  1. Just before serving, drizzle the honey mustard dressing over the salad. Toss gently to combine.
