Churro Cheesecake Donut Cookies

Combine the flavors of churros, cheesecake, and donuts into one indulgent dessert! These cookies feature a soft, donut-like base, creamy cheesecake filling, and a cinnamon-sugar coating that’s perfect for any sweet occasion.


Ingredients

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract

For the Cinnamon-Sugar Coating:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make the Cheesecake Filling:
    • In a small bowl, mix cream cheese, sugar, and vanilla extract until smooth. Scoop into teaspoon-sized dollops and place on a parchment-lined plate. Freeze for 20-30 minutes.
  3. Prepare the Dough:
    • In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract.
    • In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Assemble the Cookies:
    • Scoop 1 1/2 tablespoons of dough and flatten it slightly. Place a frozen cheesecake filling dollop in the center and wrap the dough around it, rolling it into a ball. Repeat with the remaining dough and filling.
  5. Bake:
    • Place dough balls 2 inches apart on the prepared baking sheets. Bake for 10-12 minutes, or until the edges are set and the tops are slightly puffed.
  6. Coat in Cinnamon-Sugar:
    • While the cookies are still warm, mix granulated sugar and cinnamon in a shallow bowl. Roll each cookie in the mixture to coat.
  7. Cool and Serve:
    • Let cookies cool completely before serving to allow the filling to set.

Tips for Perfect Churro Cheesecake Donut Cookies

  • Freeze the filling: This prevents the cheesecake from melting too quickly during baking.
  • Don’t overbake: The cookies should remain soft for the best texture.
  • Extra indulgence: Drizzle with caramel or melted chocolate for a fancy touch.
