Ingredients

For the Bread:

  • 250g (2 cups) all-purpose flour
  • 150g (3/4 cup) granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional, for extra warmth!)
  • 2 large eggs
  • 120ml (1/2 cup) vegetable oil
  • 60ml (1/4 cup) milk
  • 1 tsp vanilla extract
  • 2 medium apples (about 250g), peeled, cored, and finely chopped (Honeycrisp, Granny Smith, or Fuji work best!)

For the Cinnamon Sugar Swirl & Topping:

  • 50g (1/4 cup) brown sugar
  • 1 tsp ground cinnamon
  • 15g (1 tbsp) unsalted butter, melted (for brushing the top, optional)

Instructions

Step 1: Prepare the Batter

  1. Preheat the oven to 175°C (350°F). Grease a 9×5-inch (23×13 cm) loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, vegetable oil, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined—do not overmix!
  5. Fold in the chopped apples, distributing them evenly throughout the batter.

Step 2: Create the Cinnamon Swirl

  1. In a small bowl, mix the brown sugar and cinnamon.
  2. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over it.
  3. Pour the remaining batter on top and finish by sprinkling the rest of the cinnamon sugar.
  4. Use a knife or skewer to gently swirl the cinnamon sugar into the batter.

Step 3: Bake the Bread

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • If the top starts to brown too quickly, cover it loosely with foil for the last 15 minutes.

Step 4: Cool & Serve

  1. Remove the bread from the oven and let it cool in the pan for 10 minutes.
  2. Transfer to a wire rack to cool completely.
  3. For extra flavor, brush the top with melted butter before serving.
