Cinnamon Bun Cake

This Cinnamon Bun Cake is the ultimate treat for cinnamon roll lovers! Soft, moist, and packed with warm cinnamon flavor, this easy-to-make cake has a gooey cinnamon-sugar swirl and a sweet vanilla glaze. Perfect for breakfast, brunch, or dessert!


Ingredients (Serves 10-12)

For the Cake:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups milk
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

For the Cinnamon Swirl:

  • 1 cup brown sugar, packed
  • 2 tbsp all-purpose flour
  • 1 tbsp cinnamon
  • ½ cup unsalted butter, melted

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

Step 2: Make the Cake Batter

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add milk, eggs, melted butter, and vanilla extract. Mix until smooth and well combined.
  3. Pour the batter into the prepared baking dish.

Step 3: Make the Cinnamon Swirl

  1. In a small bowl, mix together brown sugar, flour, cinnamon, and melted butter until combined.
  2. Drop spoonfuls of the cinnamon mixture over the cake batter.
  3. Use a knife or toothpick to swirl it through the batter, creating a marbled effect.

Step 4: Bake

  1. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Step 5: Make the Glaze & Serve

  1. While the cake is baking, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Once the cake is done, let it cool for 10 minutes, then drizzle the glaze over the top.
  3. Slice and serve warm for the best flavor!

Tips & Variations

???? Extra Gooey? Drizzle with caramel sauce or extra cinnamon-sugar before baking.
???? Add Nuts! Chopped pecans or walnuts add a delicious crunch.
???? Apple Cinnamon Version: Fold in 1 cup of diced apples to the batter for extra flavor!
???? Rich & Buttery? Brush the cake with melted butter before adding the glaze for a true cinnamon roll taste.
