For the Cake Batter:

  • All-purpose flour – 250 g (2 cups)
  • Granulated sugar – 150 g (¾ cup)
  • Butter (softened) – 115 g (½ cup)
  • Eggs – 2 large
  • Milk – 180 ml (¾ cup)
  • Vanilla extract – 2 tsp
  • Baking powder – 2 tsp
  • Salt – ½ tsp

For the Cinnamon Swirl:

  • Brown sugar – 100 g (½ cup)
  • Ground cinnamon – 2 tsp
  • Melted butter – 2 tbsp

For the Streusel Topping:

  • All-purpose flour – 60 g (½ cup)
  • Brown sugar – 50 g (¼ cup)
  • Ground cinnamon – 1 tsp
  • Butter (cold, diced) – 40 g (3 tbsp)

For the Optional Glaze:

  • Powdered sugar – 100 g (¾ cup)
  • Milk – 2 tbsp
  • Vanilla extract – ½ tsp

Step-by-Step Instructions

Step 1: Prepare the Batter

  1. Preheat your oven to 175°C (350°F). Grease and line a 9-inch (23 cm) square or round baking pan with parchment paper.
  2. In a large mixing bowl, beat together butter and granulated sugar until light and fluffy (about 2 minutes).
  3. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients, alternating with milk, and mix until just combined. Do not overmix.

Step 2: Make the Cinnamon Swirl

  1. In a small bowl, mix brown sugar, cinnamon, and melted butter until well combined.
  2. Pour half of the cake batter into the prepared pan and smooth it out.
  3. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  4. Top with the remaining cake batter, spreading it gently to cover the cinnamon layer.

Step 3: Make the Streusel Topping

  1. In a bowl, mix flour, brown sugar, and cinnamon.
  2. Cut in the cold butter using a fork or your fingers until the mixture resembles coarse crumbs.
  3. Sprinkle the streusel evenly over the cake batter.

Step 4: Bake the Coffee Cake

  1. Bake the cake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 5: Make the Optional Glaze

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
