Ingredients (Serves 4-5)

For the Chicken:

  • Boneless, skinless chicken breasts or thighs – 500g, sliced into strips
  • Olive oil – 2 tbsp
  • Salt & black pepper – to taste
  • Smoked paprika – 1 tsp
  • Garlic powder – 1 tsp
  • Red pepper flakes – ½ tsp (optional, for heat)

For the Cowboy Butter Sauce:

  • Unsalted butter – 100g (7 tbsp)
  • Garlic, minced – 4 cloves
  • Dijon mustard – 1 tbsp
  • Lemon juice – 2 tbsp
  • Worcestershire sauce – 1 tsp
  • Fresh parsley, chopped – 2 tbsp
  • Fresh chives, chopped – 1 tbsp
  • Crushed red pepper flakes – ½ tsp (adjust to taste)
  • Salt & black pepper – to taste
  • Parmesan cheese, grated – 50g (½ cup)

For the Pasta:

  • Linguine pasta – 300g
  • Salt (for boiling water) – 1 tbsp
  • Reserved pasta water – ½ cup

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente (about 10 minutes).
  2. Reserve ½ cup of pasta water, then drain the pasta and set aside.

Step 2: Cook the Chicken

  1. Season the chicken strips with smoked paprika, garlic powder, red pepper flakes, salt, and black pepper.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 4-5 minutes per side until golden brown and cooked through.
  4. Remove the chicken from the pan and set aside.

Step 3: Make the Cowboy Butter Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in Dijon mustard, lemon juice, Worcestershire sauce, and crushed red pepper flakes.
  4. Add the cooked chicken back to the pan, stirring to coat it in the butter sauce.

Step 4: Assemble the Pasta

  1. Add the cooked linguine to the skillet with the chicken and cowboy butter sauce.
  2. Pour in a bit of reserved pasta water (as needed) to create a silky sauce that coats the pasta.
  3. Stir in grated Parmesan cheese, fresh parsley, and chives. Toss everything together until well coated.

  1. Garnish with extra Parmesan, red pepper flakes, and a squeeze of fresh lemon juice.
