Cowboy Salad is a vibrant, hearty, and nutritious salad packed with fresh vegetables, beans, corn, and a zesty dressing. Unlike a traditional salad, Cowboy Salad is bean-based, making it naturally high in protein and fiber while being completely vegetarian and gluten-free. You can serve it as a side dish, a dip with tortilla chips, or even as a topping for tacos and grilled meats.

  • 250g cherry tomatoes, halved
  • 1 small red onion (100g), finely diced
  • 1 red bell pepper (150g), diced

  • 250g canned black beans, drained and rinsed

  • 250g canned corn, drained
  • 1 avocado (150g), diced
  • 50g fresh cilantro, chopped

For the Dressing:

  • 60ml olive oil
  • 30ml fresh lime juice (about 1 large lime)
  • 30ml apple cider vinegar
  • 1 tablespoon honey (15g) (use maple syrup for a vegan option)
  • 1 teaspoon cumin (2g)
  • 1 teaspoon chili powder (2g)
  • 1/2 teaspoon garlic powder (1g)
  • 1/2 teaspoon salt (3g)
  • 1/2 teaspoon black pepper (2g)

Instructions

Step 1: Prepare the Ingredients

  1. Drain and rinse the black beans, kidney beans, and corn thoroughly.
  2. Dice the tomatoes, onion, bell peppers, and avocado.
  3. Chop the cilantro finely.

Step 2: Make the Dressing

  1. In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, honey, cumin, chili powder, garlic powder, salt, and black pepper.

Step 3: Assemble the Salad

  1. In a large mixing bowl, combine all the salad ingredients (beans, corn, vegetables, avocado, and cilantro).
  2. Pour the dressing over the salad and toss gently until everything is well coated.
