Cowboy Stew

Dinner is served! This Cowboy Stew is a hearty one-pot meal loaded with three kinds of tender meat, flavorful beans, and plenty of veggies—perfect for feeding a hungry crowd!

Ingredients

  • 4 slices bacon, chopped
  • 2 (12-ounce) packages kielbasa sausage, sliced into ½-inch rounds
  • 1½ pounds ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 (14.5-ounce) can petite diced tomatoes, with liquid
  • 2 (16-ounce) cans baked beans or ranch beans, with liquid
  • 1 (7-ounce) can chopped green chilies, with liquid
  • 1 (15-ounce) can sweet corn, with liquid
  • 2 medium russet potatoes, peeled and cut into ½-inch cubes
  • 1 cup water
  • 2 tablespoons parsley, chopped

Instructions

  1. Cook the Bacon: In a large pot, cook the bacon over medium heat until crispy. Use a slotted spoon to transfer it to a plate lined with paper towels.
  2. Brown the Sausage: Add the kielbasa slices to the bacon drippings and cook until browned on both sides. Remove and set aside with the bacon.
  3. Cook the Ground Beef: In the same pot, add the ground beef, onion, and garlic. Cook until the beef is browned and no longer pink.
  4. Season the Beef: Sprinkle the flour, salt, black pepper, and chili powder over the beef mixture. Stir well and cook for 1 minute to toast the flour.
  5. Combine the Ingredients: Stir in the diced tomatoes, baked beans, green chilies, sweet corn, potatoes, cooked bacon, sausage, and water.
  6. Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally to prevent sticking.
  7. Adjust Consistency: If the stew is too thick, add additional water as needed.
  8. Garnish and Serve: Stir in the chopped parsley just before serving. Enjoy!
