Crab and Shrimp Seafood Bisque

This Crab and Shrimp Bisque recipe brings together the sweetness of fresh crab, the delicate flavor of shrimp, and a creamy, aromatic broth infused with white wine, garlic, and herbs.

Seafood:

  • 200g shrimp, peeled, deveined, and chopped
  • 200g crab meat (lump or claw meat, fresh or canned)

Base & Aromatics:

  • 1 small onion (100g), finely diced
  • 2 cloves garlic (6g), minced
  • 1 small carrot (80g), grated or finely chopped
  • 1 stalk celery (60g), finely chopped
  • 30g tomato paste (about 2 tbsp)
  • 1 tbsp all-purpose flour (8g)
  • 2 tbsp unsalted butter (30g)
  • 1 tbsp olive oil (15ml)
  • 125ml dry white wine (e.g., Sauvignon Blanc)
  • 500ml seafood or fish stock (or chicken stock if needed)
  • 250ml heavy cream (or double cream)
  • 1 tsp paprika
  • ¼ tsp cayenne pepper (optional for heat)
  • Salt & freshly ground black pepper, to taste
  • 1 tsp lemon juice
  • Fresh parsley or chives, for garnish

Step 1: Sauté the Base

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the onion, carrot, and celery. Cook for 5–6 minutes until softened.
  3. Stir in the garlic and cook for another 1 minute until fragrant.

Step 2: Build the Flavor

  1. Add the tomato paste and cook for 2–3 minutes to caramelize slightly.
  2. Sprinkle in the flour and stir to form a roux. Cook for 1 minute to eliminate any raw flour taste.
  3. Slowly add the white wine, stirring constantly to avoid lumps.
  4. Pour in the seafood stock, then add the paprika, cayenne (if using), salt, and pepper.

Step 3: Blend for Creaminess

  1. Bring the mixture to a gentle simmer and cook for 10 minutes.
  2. Use an immersion blender to puree the soup until smooth (or carefully blend in batches in a traditional blender).
  3. Return to the pot, then stir in the heavy cream and bring to a low simmer.

Step 4: Add the Seafood

  1. Stir in the shrimp and cook for 3–4 minutes until pink and cooked through.
  2. Add the crab meat and lemon juice, gently folding it in to warm through (don’t over-stir or it may break up too much).

Step 5: Serve & Garnish

  • Ladle the bisque into warm bowls and top with fresh parsley or chives.
  • Serve with crusty bread, oyster crackers, or garlic toasts.
