Description: This Crab Salad (also known as Seafood Salad) is a fresh and flavorful dish, perfect for warm weather or as a light lunch. Made with tender imitation crab meat, crisp vegetables, and a creamy dressing, this seafood salad is a quick, easy, and crowd-pleasing recipe. Whether served in a lettuce wrap, on crackers, or as a side dish, it’s an excellent addition to any meal. With its refreshing taste and simple ingredients, Crab Salad is sure to become a family favorite!

Ingredients:

  • 1 lb imitation crab meat (or real crab meat if preferred)
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice (fresh or bottled)
  • 1 teaspoon Old Bay seasoning (optional)
  • 1/2 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup finely chopped green onions (scallions)
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and pepper to taste
  • Lettuce leaves (for serving, optional)

Instructions:

  1. Prepare the Crab Meat: If using imitation crab meat, shred it into small pieces with your hands or a fork. If using real crab meat, make sure to remove any shells and break it into bite-sized chunks.
  2. Make the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, lemon juice, and Old Bay seasoning (if using). Stir until smooth and creamy.
  3. Add the Vegetables: Add the diced celery, red bell pepper, and green onions to the bowl with the dressing. Mix well.
  4. Combine Crab and Dressing: Gently fold the crab meat into the dressing and vegetable mixture, being careful not to break up the crab too much. Stir until everything is evenly coated.
  5. Taste and Season: Taste the salad and adjust the seasoning with salt and pepper if needed. If you prefer a more tangy flavor, add a little more lemon juice.
  6. Chill: Cover the crab salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve: Serve the Crab Salad chilled, either on its own, in lettuce wraps, or with crackers as a refreshing appetizer.

Tips & Tricks:

  • Use Real Crab Meat: If you prefer a more authentic flavor, swap out imitation crab for fresh lump crab meat. Just be sure to remove any shells and cartilage.
  • Add More Veggies: You can add additional veggies such as diced cucumbers, bell peppers, or even a bit of red onion to enhance the flavor and crunch.
  • Make Ahead: This crab salad can be made ahead of time! It keeps well in the fridge for up to 2 days, making it perfect for meal prepping or serving at a party.
  • Spicy Kick: If you like a little heat, add a small amount of finely chopped jalapeño or a few dashes of hot sauce to the dressing.
  • Serving Ideas: This salad pairs beautifully with crusty bread, on top of a mixed green salad, or as a filling for a wrap or sandwich.
