Crack Breakfast Casserole

This Crack Breakfast Casserole is loaded with bacon, cheese, eggs, and hash browns, making it the perfect make-ahead breakfast for busy mornings, holiday brunches, or meal prep. Packed with savory flavors and a creamy texture, this dish will have everyone coming back for seconds!


???? Ingredients

  • 1 (30 oz) bag frozen hash browns, thawed
  • 8 large eggs
  • 1 cup whole milk
  • 1 (8 oz) package cream cheese, softened
  • 1 (1 oz) packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 lb bacon, cooked and crumbled
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup green onions, chopped (optional, for garnish)

Step 1: Prep & Preheat

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Prepare the Egg Mixture

  1. In a large mixing bowl, whisk together eggs, milk, cream cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper until smooth.

Step 3: Assemble the Casserole

  1. Spread the thawed hash browns evenly into the greased baking dish.
  2. Sprinkle half of the bacon and half of the shredded cheeses over the hash browns.
  3. Pour the egg mixture evenly over the top.
  4. Sprinkle the remaining cheddar and mozzarella cheese over the casserole.
  5. Top with the remaining bacon.

Step 4: Bake & Serve

  1. Bake uncovered for 40-45 minutes, or until the eggs are set and the top is golden brown.
  2. Let cool for 5 minutes, then sprinkle with chopped green onions (if using).
  3. Slice and serve warm!
