Ingredients

For the Pasta:

  • 250g fettuccine or spaghetti
  • 1 teaspoon salt (for pasta water)

For the Creamy Sauce:

  • 150g bacon, chopped
  • 200g mushrooms, sliced (button or cremini work best)
  • 2 cloves garlic, minced
  • 1 small onion (100g), finely chopped
  • 250ml heavy cream
  • 100ml whole milk
  • 50g cream cheese (optional, for extra richness)
  • 80g grated Parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for spice)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For Garnish:

  • 2 tablespoons fresh parsley, chopped
  • Extra grated Parmesan (for serving)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente, according to the package instructions.
  3. Reserve 100ml of pasta water, then drain and set aside.

Step 2: Cook the Bacon

  1. In a large skillet over medium heat, cook the chopped bacon until crispy (5–7 minutes).
  2. Remove the bacon and place it on a paper towel-lined plate, leaving about 1 tablespoon of bacon grease in the pan.

Step 3: Sauté the Mushrooms & Aromatics

  1. Add olive oil and butter to the skillet with the bacon grease.
  2. Toss in the sliced mushrooms and sauté for 4–5 minutes, until golden brown.
  3. Add the chopped onion and cook until soft (2 minutes).
  4. Stir in the garlic and cook for 30 seconds, until fragrant.

Step 4: Make the Creamy Sauce

  1. Reduce heat to low and pour in the heavy cream and whole milk.
  2. Stir in Parmesan cheese, cream cheese (if using), black pepper, red pepper flakes, and Italian seasoning.
  3. Simmer gently for 3–5 minutes, stirring occasionally, until the sauce thickens.

Step 5: Combine Everything

  1. Add the cooked pasta and crispy bacon to the skillet.
  2. Toss everything together, adding a splash of the reserved pasta water to loosen the sauce if needed.
  3. Taste and adjust seasoning if necessary.

Step 6: Serve & Garnish

  1. Divide into bowls and sprinkle with fresh parsley and extra Parmesan.
  2. Serve immediately with garlic bread or a side salad.
