Creamy Cauliflower Soup

This Creamy Cauliflower Soup is a velvety, flavorful dish that’s both healthy and comforting. Made with tender cauliflower, aromatic vegetables, and a touch of cream, this soup is perfect for chilly days or as a light yet satisfying meal. Serve it with crusty bread or a sprinkle of cheese for added indulgence.


Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream or milk (optional for creaminess)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon nutmeg (optional, for warmth)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, croutons, fresh parsley, or crispy bacon bits

Instructions:

  1. Sauté the Vegetables: Heat olive oil or butter in a large pot over medium heat. Add the onion and celery, cooking for 5 minutes until softened. Stir in the garlic and cook for an additional minute.
  2. Cook the Cauliflower: Add the cauliflower florets, broth, thyme, nutmeg (if using), salt, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the cauliflower is very tender.
  3. Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
  4. Add the Cream (Optional): Stir in the heavy cream or milk for added creaminess. Taste and adjust seasoning if needed.
  5. Serve: Ladle the soup into bowls and garnish with your favorite toppings like shredded cheese, croutons, parsley, or crispy bacon.
