Creamy Chicken Fettuccine Alfredo

This Chicken Fettuccine Alfredo recipe features golden pan-fried chicken and a luxurious parmesan garlic cream sauce that perfectly coats tender fettuccine. It’s a quick, indulgent dish perfect for weeknight dinners or special occasions!

Ingredients

  • 2 chicken breasts, halved lengthwise
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Flour for dredging
  • 1 tbsp olive oil
  • 3 tbsp butter (divided)
  • 8 oz uncooked fettuccine
  • 4 oz cream cheese, softened (1/2 block)
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic, minced
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Prepare Ingredients: Take cream cheese out of the fridge to soften for at least 30 minutes or microwave for 20–30 seconds. Grate the parmesan cheese.
  2. Cook Pasta: Boil a large pot of salted water for the fettuccine and cook it al dente according to package directions.
  3. Prepare Chicken: Cut chicken breasts in half lengthwise to create 4 cutlets. Sprinkle with garlic powder, salt, and pepper, then dredge in flour.
  4. Cook Chicken: Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Cook chicken for 5 minutes per side until golden and fully cooked. Remove chicken from the skillet and set aside.
  5. Make Sauce: Wipe the skillet if needed, then melt the remaining 2 tbsp butter over medium heat. Add cream cheese, heavy cream, chicken broth, and garlic. Stir until the cream cheese melts and the sauce becomes smooth. Let it bubble gently for about 5 minutes to thicken slightly.
  6. Finish Sauce: Stir in grated parmesan cheese and cook for another minute until the sauce thickens. If it gets too thick, add a splash of hot pasta water. Adjust seasoning with salt and pepper as needed.
  7. Combine and Serve: Drain the fettuccine and toss it with the sauce. Slice the chicken into strips and serve on top of the pasta or mix it in. Garnish with additional parmesan cheese, if desired.

Notes:

  • For best results, use heavy cream; substitutes may cause the sauce to separate.
  • This dish is indulgent and perfect for treating yourself!
