Creamy Chicken Pasta

This Creamy Chicken Pasta is the ultimate comfort food! Juicy chicken, tender pasta, and a rich, creamy sauce come together in one skillet for a delicious and easy weeknight dinner the whole family will love.


Ingredients

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 12 oz pasta (penne, fettuccine, or your favorite)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (optional)
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.

Step 2: Cook the Chicken

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken with garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Add chicken to the skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.

Step 3: Make the Sauce

  1. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant.
  2. Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.
  3. Stir in the heavy cream and Parmesan cheese. Let simmer for 3-4 minutes until the sauce thickens slightly.

Step 4: Combine Everything

  1. Add the cooked chicken back to the skillet. Stir in spinach and sun-dried tomatoes (if using) and cook for 1-2 minutes until wilted.
  2. Toss in the cooked pasta and mix until fully coated in the creamy sauce.

Step 5: Serve

  1. Serve hot, garnished with fresh parsley and extra Parmesan cheese if desired.

Notes

  • Pasta Choices: Use any pasta shape you like, such as penne, rigatoni, or linguine.
  • Add Veggies: Feel free to add mushrooms, peas, or broccoli for extra veggies.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or microwave.
