Ingredients

For the Chicken:

  • Boneless, skinless chicken breasts – 500 g (2 large or 3 medium)
  • Salt – ½ tsp
  • Black pepper – ½ tsp
  • Garlic powder – ½ tsp
  • Olive oil – 1 tbsp (15 ml)
  • Butter – 1 tbsp (15 g)

For the Boursin Sauce:

  • Garlic & Fine Herbs Boursin cheese – 150 g (1 round package)
  • Heavy cream – 120 ml (½ cup)
  • Chicken broth – 120 ml (½ cup)
  • White wine (optional) – 60 ml (¼ cup)
  • Dijon mustard – 1 tsp
  • Fresh garlic, minced – 2 cloves
  • Fresh parsley, chopped – 1 tbsp
  • Parmesan cheese (optional, for extra richness) – 2 tbsp

Step-by-Step Instructions

Step 1: Prepare the Chicken

  1. Pat the chicken breasts dry with a paper towel.
  2. Season both sides with salt, pepper, and garlic powder.

Step 2: Sear the Chicken

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add the chicken and sear for 5–6 minutes per side, until golden brown.
  3. Remove from the pan and set aside.

Step 3: Make the Boursin Sauce

  1. In the same pan, reduce heat to medium and add minced garlic.
  2. Sauté for 30 seconds until fragrant.
  3. Pour in the white wine (if using) and let it simmer for 1 minute, scraping up browned bits.
  4. Stir in the chicken broth and heavy cream.
  5. Add the Boursin cheese and stir until melted and smooth.
  6. Mix in Dijon mustard and Parmesan cheese (if using).

Step 4: Simmer & Finish the Dish

  1. Return the seared chicken to the pan, spooning sauce over the top.
