Creamy Crockpot White Chicken Chili

Ingredients (Serves 6-8)

For the Chili:

  • Chicken breasts – 500g (about 2 large breasts)
  • Chicken broth – 480ml (2 cups)
  • White beans (cannellini or great northern beans), drained and rinsed – 450g (about 2 cans)
  • Green chilies, chopped – 120g (1 small can)
  • Sweet corn, drained – 150g (1 cup)
  • Cream cheese – 120g (½ cup), softened
  • Heavy cream – 120ml (½ cup)
  • Garlic cloves, minced – 3
  • Onion, finely chopped – 1 medium (about 100g)
  • Ground cumin – 1½ teaspoons
  • Chili powder – 1 teaspoon
  • Dried oregano – 1 teaspoon
  • Paprika – ½ teaspoon
  • Salt – 1 teaspoon (adjust to taste)
  • Black pepper – ½ teaspoon

Optional Toppings:

  • Shredded cheese (cheddar, Monterey Jack, or pepper jack)
  • Fresh cilantro, chopped
  • Sour cream
  • Avocado slices
  • Tortilla chips or strips
  • Lime wedges

Instructions

Step 1: Prepare the Ingredients

  • Rinse and drain the white beans and corn.
  • Finely chop the onion and mince the garlic.
  • Cut the cream cheese into small cubes (this will help it melt faster).

Step 2: Add Ingredients to the Crockpot

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the chicken broth, white beans, green chilies, corn, onion, garlic, cumin, chili powder, oregano, paprika, salt, and black pepper.
  3. Stir gently to combine everything, making sure the chicken is submerged in the broth.

Step 3: Slow Cook the Chili

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • The chicken should be tender and easily shreddable when done.

Step 4: Shred the Chicken

  • Remove the cooked chicken breasts from the crockpot and shred them using two forks.
  • Return the shredded chicken to the crockpot and stir.

Step 5: Make It Creamy

  1. Add the cream cheese and heavy cream to the chili.
  2. Stir well until the cream cheese is fully melted and incorporated, creating a rich and creamy broth.
  3. Let the chili cook for an additional 10-15 minutes on low to allow all the flavors to meld together.

  • Ladle the creamy white chicken chili into bowls.
