Creamy Mushroom Chicken

This creamy mushroom chicken features juicy chicken breasts smothered in a rich, savory mushroom sauce. The tender chicken, coated in a golden crust, is complemented by the earthy flavor of mushrooms and a velvety sauce made with white wine and heavy cream. Perfect for serving over mashed potatoes or buttered noodles!

Ingredients:

  • 10 oz. button or baby bella mushrooms, sliced
  • 2 tbsp salted butter
  • 2 large boneless skinless chicken breasts
  • ½ cup all-purpose flour

For the Sauce:

  • 2 ½ cups beef broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 tsp soy sauce (or Worcestershire sauce)
  • 1 tsp onion powder
  • ½ tsp mustard powder
  • ½ tsp dried thyme
  • ½ cup dry white wine
  • 3 cloves garlic, minced
  • 3 tbsp cornstarch
  • ⅓ cup heavy cream

Instructions:

  1. Prep Work: In a bowl, combine beef broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside. In a separate container, mix cornstarch with 3 tbsp cold water and shake to combine. Set aside. Slice and pat dry mushrooms, then slice chicken into thinner pieces, about ½ inch thick.
  2. Cook the Mushrooms: Melt butter over medium-high heat. Cook mushrooms for 3-4 minutes per side, allowing them to brown. Set aside.
  3. Dredge and Sear the Chicken: Season chicken with salt and pepper, then dredge in flour. Heat olive oil in a pan and cook chicken for 4-5 minutes per side until golden brown. Remove and set aside. Repeat with remaining chicken.
  4. Deglaze the Pan: Remove excess oil but keep the brown bits in the pan. Add wine and garlic, scraping the bottom to release the flavors. Let it bubble for 4 minutes to reduce.
  5. Finish the Sauce: Add beef broth mixture and bring to a gentle boil. Let it reduce for 10 minutes. Stir in cornstarch mixture, then gradually add cream. Once thickened, add mushrooms back in.
  6. Combine and Serve: Return chicken to the pan, spoon sauce over it, and cover partially. Let it heat through for about 5 minutes. Serve with mashed potatoes or buttered noodles, and enjoy!
