Creamy Sausage Rigatoni

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tablespoon olive oil (if sausage is lean)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 (14 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. In a large skillet, cook the sausage over medium heat, breaking it up with a spoon until browned and cooked through (6–8 minutes). Remove excess grease if necessary.
  3. Add onion and garlic to the sausage. Sauté for 2–3 minutes until softened and fragrant. Add red pepper flakes, oregano, salt, and pepper.
  4. Pour in crushed tomatoes, stir well, and simmer for 5–7 minutes to thicken slightly.
  5. Reduce heat to low, then stir in heavy cream and Parmesan. Simmer for another 2 minutes until the sauce is smooth and creamy.
  6. Toss in the cooked rigatoni, adding reserved pasta water a little at a time to help the sauce coat the pasta beautifully.
  7. Garnish with fresh basil or parsley, and more Parmesan if desired. Serve hot!
