Creamy Sausage Tortellini Soup

There’s nothing more comforting than a warm bowl of Sausage Tortellini Soup on a chilly day! This hearty, creamy soup is packed with savory Italian sausage, cheese-filled tortellini, and a rich, flavorful broth that makes every bite irresistible.

The best part? It comes together in just 30 minutes, making it the perfect weeknight dinner. Serve it with crusty bread or a side salad for a complete, satisfying meal!


Ingredients (Serves 4-6)

For the Soup:

  • Italian sausage (mild or spicy) – 250g
  • Onion (diced) – 1 medium
  • Garlic cloves (minced) – 3
  • Carrots (chopped) – 2 medium
  • Celery stalks (chopped) – 2
  • Tomato paste – 1 tbsp
  • Diced tomatoes (canned) – 400g
  • Chicken broth – 1 liter
  • Heavy cream – 120ml
  • Cheese tortellini (fresh or frozen) – 300g
  • Spinach (fresh) – 100g
  • Olive oil – 1 tbsp
  • Italian seasoning – 1 tsp
  • Salt & pepper – To taste
  • Parmesan cheese – For garnish

How to Make Sausage Tortellini Soup

Step 1: Brown the Sausage

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage, breaking it up with a spoon, and cook until browned (about 5 minutes).
  3. Remove excess grease if needed.

Step 2: Sauté the Vegetables

  1. Add onion, carrots, celery, and garlic to the pot.
  2. Cook for 3-4 minutes until softened.
  3. Stir in tomato paste and cook for 1 minute to enhance the flavor.

Step 3: Simmer the Soup

  1. Pour in diced tomatoes and chicken broth.
  2. Add Italian seasoning, salt, and pepper to taste.
  3. Bring to a boil, then reduce to low heat and let it simmer for 10 minutes.

Step 4: Add Tortellini & Finish

  1. Add cheese tortellini and cook according to package instructions (3-5 minutes for fresh, 5-7 minutes for frozen).
  2. Stir in heavy cream and fresh spinach.
  3. Simmer for 2 more minutes, then remove from heat.

Step 5: Serve & Enjoy

  1. Ladle into bowls and top with grated Parmesan cheese.
  2. Serve with garlic bread or a side salad.
