Creamy Taco Soup

This Creamy Taco Soup is a rich, flavorful, and satisfying dish perfect for a cozy dinner or a quick weeknight meal. Packed with ground beef, beans, veggies, and a creamy, cheesy base, this soup is a Tex-Mex favorite. Serve it with your favorite toppings for a customizable and crowd-pleasing dish!


Ingredients:

  • 1 lb (450g) ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (14.5 oz) diced tomatoes with green chilies (like Rotel), undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 2 cups chicken or beef broth
  • 1 cup heavy cream (or cream cheese, softened)
  • 1 1/2 cups shredded cheddar cheese

Optional Toppings:

  • Tortilla chips
  • Sour cream
  • Diced avocado
  • Chopped cilantro
  • Sliced jalapeños

Instructions:

  1. Cook the Ground Beef: In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat. Add the diced onion, bell pepper, and garlic, and cook for 3-4 minutes, or until softened.
  2. Add Seasonings: Stir in the taco seasoning and mix until the beef and vegetables are well coated.
  3. Combine Ingredients: Add the diced tomatoes, black beans, corn, and broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  4. Make It Creamy: Stir in the heavy cream (or softened cream cheese) and shredded cheddar cheese until the soup is creamy and the cheese is fully melted. Taste and adjust seasonings if necessary.
  5. Serve: Ladle the soup into bowls and top with your favorite toppings like tortilla chips, sour cream, or diced avocado.
