Crème Brûlée Cookies

These Crème Brûlée Cookies combine the rich, creamy flavor of classic crème brûlée with a soft, buttery sugar cookie. Topped with a luscious vanilla custard and a crisp caramelized sugar layer, these cookies are a dream for dessert lovers! Perfect for special occasions or when you want to impress!


Ingredients

For the Cookies:

  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

For the Custard Filling:

  • ¾ cup heavy cream
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

For the Caramelized Sugar Topping:

  • ¼ cup granulated sugar

Instructions

Step 1: Make the Cookies

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until a soft dough forms.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Using the back of a spoon or your thumb, create a small indentation in the center of each cookie.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool completely.

Step 2: Make the Custard Filling

  1. In a small saucepan, heat the heavy cream over medium heat until hot but not boiling.
  2. In a separate bowl, whisk together the egg yolks, sugar, and vanilla extract.
  3. Slowly pour the warm cream into the egg mixture while whisking continuously.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens (about 3-5 minutes). Do not boil.
  5. Remove from heat and let cool slightly.

Step 3: Assemble the Cookies

  1. Spoon a small amount of custard filling into the indentation of each cooled cookie.
  2. Chill the cookies in the fridge for 10-15 minutes to set the custard.

Step 4: Caramelize the Sugar Topping

  1. Sprinkle a thin layer of sugar over the custard-filled cookies.
  2. Use a kitchen torch to caramelize the sugar until golden and crisp. If you don’t have a torch, place the cookies under a broiler for 1-2 minutes, watching closely to avoid burning.
  3. Let the caramelized sugar harden before serving. Enjoy the perfect crunchy, creamy, and buttery bite!
