Ingredients:
- 8 russet potatoes
- 2 cups ice
- 1½ tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ cup olive oil
- ¼ cup shredded parmesan cheese
- ¼ cup grated parmesan cheese
- 2 tbsp parsley, chopped
- 2 tbsp chives, chopped

Directions:
- Wash and cut potatoes into thin round slices. Place in a large bowl, covering with water, and add 2 cups of ice. Let soak for 30 minutes.
- After soaking, remove potatoes, pat dry, and preheat oven to 450°F.
- Place potatoes in a zip-top bag with garlic powder, paprika, salt, and pepper. Seal and shake to coat.
- Add olive oil to the bag, reseal, and shake again to coat evenly.
- Lay potatoes in a single layer on a parchment-lined baking sheet. Bake for 35-40 minutes, or until golden and crispy.
- Remove from the oven and toss with both types of parmesan, parsley, and chives. Serve immediately with ranch or ketchup.
