Crispy Garlic Parmesan Roasted Potatoes

These crispy, golden-brown roasted potatoes are packed with flavor and make the perfect side dish or snack. Thinly sliced russet potatoes are coated in garlic powder, smoked paprika, and two types of parmesan, then roasted to crispy perfection. Topped with fresh parsley and chives, these potatoes are an irresistible treat. Serve with ranch dressing or ketchup for the ultimate indulgence!

Ingredients:

  • 8 russet potatoes
  • 2 cups ice
  • 1½ tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • ½ cup olive oil
  • ¼ cup shredded parmesan cheese
  • ¼ cup grated parmesan cheese
  • 2 tbsp parsley, chopped
  • 2 tbsp chives, chopped

Directions:

  1. Wash and cut potatoes into thin round slices. Place in a large bowl, covering with water, and add 2 cups of ice. Let soak for 30 minutes.
  2. After soaking, remove potatoes, pat dry, and preheat oven to 450°F.
  3. Place potatoes in a zip-top bag with garlic powder, paprika, salt, and pepper. Seal and shake to coat.
  4. Add olive oil to the bag, reseal, and shake again to coat evenly.
  5. Lay potatoes in a single layer on a parchment-lined baking sheet. Bake for 35-40 minutes, or until golden and crispy.
  6. Remove from the oven and toss with both types of parmesan, parsley, and chives. Serve immediately with ranch or ketchup.
