Tender roasted carrots coated in a buttery parmesan and herb crust make the perfect side dish for any meal. This easy recipe transforms simple carrots into a crispy, golden, and flavorful treat that both kids and adults will love.

Ingredients

  • 1 lb (450 g) carrots, peeled and sliced into sticks or kept whole if thin
  • 2 tbsp olive oil or melted butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika (optional, for color)
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the carrots with olive oil or melted butter, salt, pepper, garlic powder, and paprika until evenly coated.
  3. Sprinkle the Parmesan cheese over the carrots and toss again to coat.
  4. Spread the carrots in a single layer on the baking sheet, making sure they aren’t overlapping.
  5. Roast for 20–25 minutes, flipping halfway through, until tender and golden brown.
  6. Garnish with chopped parsley before serving.
