Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional, for extra depth)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs (for extra crunch, optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

Step 1: Prep the Cauliflower

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or foil for easy cleanup.
  3. Wash and cut the cauliflower into bite-sized florets.

Step 2: Season the Cauliflower

  1. In a large bowl, toss cauliflower with olive oil, ensuring all pieces are coated.
  2. Add garlic powder, onion powder, smoked paprika, salt, and pepper, tossing again.

Step 3: Add the Crunchy Coating

  1. In a small bowl, mix Parmesan cheese and panko breadcrumbs.
  2. Sprinkle this mixture over the cauliflower, tossing well to coat evenly.

Step 4: Roast to Perfection

  1. Spread cauliflower on the prepared baking sheet in a single layer (avoid overcrowding).
  2. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Step 5: Garnish & Serve

  • Remove from the oven and sprinkle with fresh parsley.
  • Serve immediately as a side dish or snack, with a dip like ranch or marinara!

  • Extra Crunch: Use more panko for a crispier texture.
  • Cheesy Goodness: Add a sprinkle of shredded mozzarella in the last 5 minutes.
