These crispy roasted potatoes with garlic, parmesan, and bacon are the perfect side dish for any meal! The tender inside and crispy, golden edges make them irresistibly delicious, while the garlic butter and fresh parmesan bring amazing flavor. Add crispy bacon bits for an extra savory crunch that everyone will love!

Ingredients:

  • 3 pounds (1.5 kg) baby red potatoes, washed and quartered
  • 1/4 cup (60ml) olive oil
  • 6 large cloves garlic, finely chopped or minced
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon Italian seasoning
  • 3/4 cup fresh grated Parmesan cheese
  • 1/2 cup unsalted butter
  • Fresh chopped parsley, for garnish
  • 1/2 cup crispy bacon bits (optional)

Instructions:

  1. Preheat the oven to 400ºF (200°C), placing a rack at the bottom.
  2. Wash and quarter the potatoes.
  3. Grease a large baking sheet with non-stick spray or olive oil.
  4. Parboil the baby red potatoes in boiling water for 5-8 minutes for a tender interior.
  5. In a large bowl, mix olive oil, garlic, salt, pepper, Italian seasoning, and parmesan cheese. If needed, add more olive oil to ensure the cheese is evenly coated.
  6. Toss the parboiled potatoes in the garlic parmesan mixture, ensuring they are fully coated.
  7. Arrange the potatoes, cut side down, on the prepared baking sheet in a single layer.
  8. Roast for 25 minutes, flipping halfway through, until golden and crispy.
  9. Meanwhile, melt the butter and combine with fresh parsley. Drizzle over the roasted potatoes, add bacon bits (if using), and toss to coat.
  10. Serve immediately and enjoy!
