  • 100g all-purpose flour
  • 2 eggs
  • 120g panko breadcrumbs
  • 50g grated Parmesan cheese
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon smoked paprika (5g)
  • ½ teaspoon salt (2.5g)
  • ½ teaspoon black pepper (2.5g)
  • 1 teaspoon lemon zest (5g)
  • 250ml vegetable oil (for frying) or 1 tablespoon olive oil (for baking)

For the Dipping Sauce:

  • 100g Greek yogurt or mayonnaise
  • 50g sour cream
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon Dijon mustard (5g)
  • 1 teaspoon honey (5g)
  • 1 teaspoon hot sauce (optional, for spice)
  • ½ teaspoon garlic powder (2.5g)
  • ½ teaspoon salt (2.5g)
  • 1 tablespoon chopped fresh dill or parsley

Instructions

Step 1: Prepare the Coating

  1. In one bowl, add the flour.
  2. In a second bowl, whisk the eggs.
  3. In a third bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, black pepper, and lemon zest.

Step 2: Coat the Salmon

  1. Dip each salmon cube into the flour, coating evenly.
  2. Next, dip it into the beaten eggs, ensuring full coverage.
  3. Finally, coat it with the panko mixture, pressing gently to help the crumbs stick.

Step 3: Cook the Salmon Bites

For Frying:

  1. Heat vegetable oil in a deep skillet over medium heat.
  2. Fry the salmon bites in batches for 2-3 minutes per side until golden brown and crispy.
  3. Remove and drain on a paper towel.

For Baking (Healthier Option):

  1. Preheat the oven to 200°C (400°F).
  2. Place the coated salmon bites on a baking sheet lined with parchment paper.
  3. Drizzle lightly with olive oil and bake for 12-15 minutes, flipping halfway through.

Step 4: Make the Sauce

  1. In a small bowl, whisk together Greek yogurt (or mayo), sour cream, lemon juice, Dijon mustard, honey, hot sauce, garlic powder, salt, and fresh dill.
  2. Adjust seasoning to taste and refrigerate until ready to serve.

Step 5: Serve & Enjoy!

  1. Serve the crispy salmon bites hot with the zesty dipping sauce on the side.
  2. Garnish with extra parsley or lemon wedges for a fresh touch.

Tips & Tricks for the Best Crispy Salmon Bites

???? Use Fresh Salmon – Fresh, high-quality salmon gives the best flavor and texture.

???? Extra Crispy Coating – For even more crunch, double-dip the salmon in the egg and panko mixture.

???? Make It Healthier – Try air-frying at 200°C (400°F) for 10-12 minutes instead of deep frying.

???? Brighten It Up – A squeeze of fresh lemon juice over the bites adds extra freshness.

???? Make Ahead Tip – Coat the salmon pieces and refrigerate for up to 4 hours before cooking.

Creative Variations to Try

???? Spicy Cajun Salmon Bites – Add 1 teaspoon of Cajun seasoning for a bold, spicy kick.

???? Avocado Cream Sauce – Swap the dipping sauce for a blend of mashed avocado, lime juice, and sour cream.

???? Garlic Butter Version – Toss the cooked salmon bites in melted garlic butter before serving.

???? Asian-Style Salmon Bites – Serve with a soy-ginger dipping sauce and top with sesame seeds.
