Crispy Zucchini Chips

When you’re craving something salty, crispy, and snackable — but still want to stay on the healthy side — look no further than these Crispy Zucchini Chips! Thinly sliced zucchini rounds are lightly seasoned, baked (or air-fried!) to golden perfection, and satisfy that chip craving without the guilt.

Whether you enjoy them solo, pair them with your favorite dip, or serve them as a side with burgers or sandwiches, these zucchini chips are a fun, flavorful alternative to greasy potato chips. Plus, they’re gluten-free, keto-friendly, and super easy to make!


???? Ingredients (Serves 2–4)

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 2 tablespoons grated Parmesan (optional, for extra flavor)

1. Preheat Oven

Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or a silicone mat.

2. Slice Zucchini Thin

Using a mandoline or very sharp knife, slice zucchini into thin rounds (about 1/8-inch thick or less). The thinner, the crispier!

3. Dry the Slices

Place the zucchini slices on paper towels and pat them dry. This step is crucial for achieving maximum crispiness.

4. Season and Coat

In a bowl, toss the zucchini slices with olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, and Parmesan if using.

5. Arrange on Baking Sheet

Spread the zucchini slices in a single layer on the baking sheet, making sure they don’t overlap.

6. Bake Low and Slow

Bake for 1.5 to 2 hours, flipping halfway through, until golden and crispy. Keep an eye on them toward the end so they don’t burn.

Air Fryer Method: Preheat air fryer to 375°F. Air fry zucchini chips in batches for 10–15 minutes, shaking the basket halfway.

7. Cool and Enjoy

Let chips cool for 5 minutes — they’ll crisp up even more as they sit. Serve immediately or store in an airtight container for up to 2 days.
