Crock Pot Crack Potato Soup is a creamy, cheesy, and irresistible dish loaded with potatoes, bacon, and ranch flavors. This comforting, easy-to-make soup is perfect for chilly days or whenever you’re craving a bowl of hearty goodness.


Ingredients

  • 6 medium potatoes, peeled and diced (Yukon Gold or Russet recommended)
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 (8 oz) package cream cheese, softened
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (1 oz) packet ranch dressing mix
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled bacon (plus extra for garnish)
  • 1/2 cup heavy cream
  • Salt and black pepper, to taste
  • Chopped green onions (optional, for garnish)

Instructions

  1. Add Ingredients to the Crock Pot:
    • Place the diced potatoes, onion, chicken broth, cream of chicken soup, and ranch dressing mix in your crock pot. Stir to combine.
  2. Cook the Soup:
    • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. Blend the Soup (Optional):
    • For a smoother texture, use an immersion blender to partially blend the soup. Leave some chunks of potato for texture, or skip this step if you prefer a chunky soup.
  4. Add Creamy Ingredients:
    • Stir in the softened cream cheese, shredded cheddar cheese, crumbled bacon, and heavy cream. Mix until the cheese is melted and the soup is smooth.
  5. Season and Serve:
    • Taste the soup and add salt and black pepper as needed. Ladle into bowls and garnish with extra bacon, cheddar cheese, and green onions if desired.

Tips for the Best Crack Potato Soup

  • Use Fresh Potatoes: Freshly peeled and diced potatoes provide the best flavor and texture.
  • Make It Spicier: Add a pinch of cayenne pepper or red pepper flakes for a little heat.
  • Thicken the Soup: If you prefer a thicker consistency, mash some of the potatoes or stir in 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water.
