  1. Season the chicken: Pat the chicken dry and season with salt, pepper, and paprika on both sides.
  2. Sear the chicken (optional): In a skillet, heat olive oil over medium-high heat. Sear chicken for 2–3 minutes per side until lightly golden. This step adds extra flavor but is optional.
  3. Add to crockpot: Place the chicken in the crockpot. Add garlic, sun-dried tomatoes, Italian seasoning, and chicken broth.
  4. Cook: Cover and cook on low for 5–6 hours or high for 2½–3½ hours, until the chicken is fully cooked and tender.
  5. Make it creamy: During the last 30 minutes of cooking, stir in the heavy cream and Parmesan cheese. If you’d like a thicker sauce, mix cornstarch with water and add it now.
  6. Serve: Once the sauce is creamy and the chicken is tender, garnish with fresh basil or parsley. Serve over pasta, mashed potatoes, rice, or with a side of crusty bread to soak up the sauce.
