Looking for an easy-to-make, flavorful dish that will quickly become a family favorite? Look no further than Crockpot Pineapple Chicken! This sweet and savory chicken recipe combines tender chicken with a tangy, fruity pineapple sauce that creates a perfectly balanced dish with a tropical twist.

Using your trusty slow cooker, this recipe allows you to create a delicious, no-fuss meal that’s ready when you are. The pineapple adds a natural sweetness, while the combination of soy sauce, garlic, and ginger gives it that bold, Asian-inspired flavor. Plus, the chicken turns out incredibly juicy and tender—just the way we like it!

Perfect for serving over rice or alongside a fresh salad, this Crockpot Pineapple Chicken is a great option for busy weeknights, meal prepping, or a dinner gathering.

Ingredients

(Serves 4-6)

For the Chicken:

  • 700g boneless, skinless chicken breasts (or thighs)
  • 240g pineapple chunks (fresh or canned, drained)
  • 120ml low-sodium soy sauce
  • 60ml honey
  • 60ml rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch (optional, to thicken sauce)
  • 1/2 teaspoon black pepper
  • 1 tablespoon sesame oil (optional, for added flavor)

For Garnish (Optional):

  • Chopped green onions
  • Sesame seeds

Instructions

Step 1: Prepare the Chicken and Sauce

  1. Place the chicken breasts or thighs at the bottom of the Crockpot.
  2. In a mixing bowl, combine the pineapple chunks, soy sauce, honey, rice vinegar, garlic, ginger, and black pepper. Stir until the sauce is well-mixed.
  3. Pour the sauce mixture over the chicken in the Crockpot, ensuring the chicken is evenly coated.

Step 2: Slow Cook the Chicken

  1. Cover and cook on low heat for 4-6 hours, or on high heat for 2-3 hours, until the chicken is fully cooked and easily shreds with a fork.

Step 3: Shred the Chicken

  1. Once the chicken is cooked, remove it from the Crockpot and shred it with two forks.
  2. Return the shredded chicken to the sauce in the Crockpot and stir to coat the chicken with the sauce.

Step 4: Thicken the Sauce (Optional)

  1. If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water, then stir it into the Crockpot.
  2. Let the sauce cook on high for an additional 15-20 minutes, or until thickened to your desired consistency.

Step 5: Serve and Garnish

  1. Serve the Pineapple Chicken over rice, quinoa, or noodles for a complete meal.
  2. Garnish with chopped green onions and a sprinkle of sesame seeds for extra flavor and visual appeal.

Tips & Tricks for the Best Crockpot Pineapple Chicken

???? Use Fresh Pineapple for Extra Flavor – If you want a vibrant, fresh flavor, opt for fresh pineapple instead of canned. The sweetness and tang will shine through in the dish.

???? Sweetness Control – If you prefer a less sweet dish, reduce the amount of honey or substitute it with a sugar-free sweetener.

???? Serve with Rice – Serve this dish with a bowl of steamed white rice, brown rice, or jasmine rice to soak up the flavorful sauce.

????️ Add Spice – If you enjoy a little heat, consider adding a pinch of red pepper flakes or a sliced jalapeño to the sauce for a spicy twist.

???? Meal Prep Friendly – This dish is perfect for meal prep. Make a large batch and store it in the fridge for up to 4 days, or freeze for later!

Creative Variations to Try

???? Citrus Twist – For a citrusy flair, try adding orange zest and a bit of fresh orange juice to the sauce. This will give the dish an added layer of brightness and complexity.

???? Add Veggies – Throw in some diced bell peppers, carrots, or snap peas in the last hour of cooking to add more veggies and color to the dish.

???? Coconut Pineapple Chicken – For a tropical flair, add coconut milk to the sauce for extra creaminess and a mild coconut flavor.

???? Pineapple Chicken Skewers – If you want a grilled version, marinate the chicken in the same sauce and thread it onto skewers with pineapple chunks. Grill for a smoky, delicious option.

What to Serve with Crockpot Pineapple Chicken

???? Steamed Rice – Serve this dish over a bed of fluffy steamed white rice or brown rice for a hearty, satisfying meal.

???? Asian-Inspired Salad – Pair it with a crisp Asian slaw or a fresh cucumber salad for added crunch and balance.

???? Roasted Vegetables – Roasted broccoli, zucchini, or bell peppers make a great side to complement the tropical flavors.

???? Garlic Bread – A side of garlic bread or crusty bread is perfect for soaking up the extra sauce.
