  • 1½ cups corn kernels (fresh, frozen, or canned – drained)
  • ½ cup all-purpose flour
  • ¼ cup cornmeal (or more flour)
  • ½ teaspoon baking powder
  • 2 large eggs
  • ¼ cup milk
  • ½ cup shredded cheddar cheese (or mozzarella)
  • 2 green onions, finely chopped
