Looking for a fast, fun, and seriously delicious no-bake treat? These Chocolate Rice Krispie Balls are ready in minutes and made with crunchy cereal, rich cocoa flavor, and a soft, chewy texture. Perfect for kids and adults alike, these bite-sized goodies are ideal for holiday platters, after-school snacks, or anytime sweet cravings.

Ingredients

  • 3 tablespoons unsalted butter
  • 1/2 cup peanut butter (or almond/sunflower butter)
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups powdered sugar
  • 1/2 cup semi-sweet chocolate chips (optional, for melting/dipping)
  • Optional toppings: shredded coconut, sprinkles, chopped nuts

Instructions

  1. Melt & mix:
In a saucepan over low heat, melt butter and peanut butter together, stirring until smooth. Remove from heat and stir in cocoa powder and vanilla.
  2. Add dry ingredients:
In a large mixing bowl, combine Rice Krispies and powdered sugar. Pour the peanut butter mixture over and stir until well coated.
  3. Form balls:
Roll mixture into 1-inch balls using your hands. If mixture is too sticky, chill in the fridge for 10 minutes or dust hands lightly with powdered sugar.
  4. Optional – coat in chocolate:
Melt chocolate chips in the microwave in 30-second intervals. Dip each ball halfway or fully in melted chocolate, then place on wax paper.
  5. Chill & serve:
Refrigerate for 15–20 minutes to set. Store in an airtight container in the fridge.

Tips

  • Chill before rolling if the mixture is warm—it will be easier to handle.
  • Use parchment or wax paper to avoid sticking when setting the balls.
  • Want them firmer? Add a few more tablespoons of powdered sugar or crushed cereal.
  • Use a cookie scoop for evenly sized balls.

Variations and Substitutions

  • Nut-free version: Use sunflower seed butter or cookie butter instead of peanut butter.
  • Add-ins: Mix in mini marshmallows, crushed pretzels, or mini chocolate chips.
  • Festive version: Roll in colored sprinkles or drizzle with white chocolate for holidays.
  • Cocoa-free: Skip the cocoa powder for a classic PB-Rice Krispie flavor.
  • Healthier take: Use natural peanut butter and reduce powdered sugar by 1/4 cup.

FAQs

Can I make these ahead of time?
Yes! These store beautifully in the fridge for up to 1 week or freeze well for up to 2 months.

Can kids help with these?
Absolutely—they’re fun to roll, dip, and decorate.

Do I need to cook anything?
Nope—just melt the butter and peanut butter. Everything else is mix-and-roll!

Why are mine too soft/sticky?
Try chilling the mix or adding extra cereal or powdered sugar until it firms up.
