  • 1 kg Yukon Gold or Russet potatoes, peeled and cubed
  • 75g unsalted butter, softened
  • 125ml heavy cream

  • ¼ teaspoon nutmeg (optional, for a gourmet touch)
  • 1 egg yolk + 1 tablespoon milk (for egg wash)

Instructions

Step 1: Cook the Potatoes

  1. Bring a large pot of salted water to a boil.
  2. Add peeled and cubed potatoes and cook for 15-18 minutes until fork-tender.
  3. Drain the potatoes well and let them sit for a few minutes to remove excess moisture.

Step 2: Mash and Season

  1. Pass the potatoes through a potato ricer (or mash very smoothly with a fork).
  2. Stir in the butter, heavy cream, salt, white pepper, and nutmeg until fully combined.
  3. Add the egg yolks and mix well. The mixture should be smooth and creamy but firm enough to hold its shape.

Step 3: Pipe the Potatoes

  1. Preheat your oven to 200°C (400°F).
  2. Line a baking sheet with parchment paper.
  3. Transfer the potato mixture into a piping bag fitted with a large star tip.
  4. Pipe swirls or rosettes onto the baking sheet, leaving space between each.

Step 4: Brush and Bake

  1. Mix 1 egg yolk with 1 tablespoon milk for the egg wash.
  2. Lightly brush each potato swirl to give them a golden, crispy finish.
  3. Bake for 18-22 minutes, or until they turn golden brown on the edges.
