Ingredients

For the Pork Tenderloin:

  • 600g pork tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 tablespoon Dijon mustard (optional, for extra flavor)

For the Garlic Butter Glaze (Optional):

  • 2 tablespoons melted butter
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh parsley, chopped
  • ½ teaspoon lemon juice

Instructions

Step 1: Prepare the Pork Tenderloin

  1. Preheat your oven to 200°C (400°F).
  2. Pat the pork tenderloin dry with paper towels to help the seasoning stick.
  3. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, smoked paprika, oregano, and thyme.
  4. Rub the olive oil over the pork, then coat it evenly with the seasoning mix.

Step 2: Sear the Pork (Optional for Extra Flavor)

  1. Heat a large oven-safe skillet over medium-high heat.
  2. Add a little olive oil and sear the pork on all sides for 2-3 minutes per side, creating a golden crust.

Step 3: Bake the Pork Tenderloin

  1. Place the seared pork tenderloin in a baking dish or oven-safe skillet.
  2. If using, mix the melted butter, garlic, parsley, and lemon juice, then brush it over the pork.
  3. Bake for 18-20 minutes, or until the internal temperature reaches 63°C (145°F) for perfect juiciness.
  4. Remove from the oven, cover with foil, and let it rest for 5-10 minutes before slicing.

Step 4: Slice & Serve

  1. Slice the pork into medallions and drizzle with any juices from the baking dish.
  2. Serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
