Easy Bibimbap with Ground Beef

If you’re craving a quick, flavorful, and satisfying meal, this Easy Bibimbap with Ground Beef is a perfect choice! Bibimbap, meaning “mixed rice” in Korean, is a colorful dish featuring seasoned beef, crispy veggies, a fried egg, and spicy gochujang sauce over a bed of fluffy rice.

This one-bowl meal is customizable, nutritious, and incredibly easy to make in just 30 minutes—perfect for a weeknight dinner!


Ingredients (Serves 4-6)

For the Ground Beef:

  • 500g (1 lb) ground beef
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper

For the Vegetables:

  • 1 cup carrots, julienned
  • 1 cup zucchini, julienned
  • 1 cup spinach or bok choy
  • 1 cup bean sprouts
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • 1 teaspoon sesame seeds

For the Rice & Toppings:

  • 3 cups cooked white rice (or brown rice)
  • 4 eggs, fried sunny-side up
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 2 tablespoons chopped green onions

Instructions

Step 1: Cook the Ground Beef

1️⃣ Heat a pan over medium-high heat. Add the ground beef and cook until browned.
2️⃣ Stir in garlic, soy sauce, brown sugar, sesame oil, and black pepper. Cook for 2-3 more minutes, then set aside.


Step 2: Prepare the Vegetables

3️⃣ In a separate pan, sauté carrots and zucchini with ½ teaspoon sesame oil and a pinch of salt for 2 minutes each.
4️⃣ Quickly blanch spinach and bean sprouts in boiling water for 30 seconds, then drain. Toss with 1 teaspoon sesame oil and sesame seeds.


Step 3: Assemble the Bibimbap Bowls

5️⃣ Divide the cooked rice into serving bowls.
6️⃣ Arrange the ground beef, vegetables, and a fried egg on top.
7️⃣ Add a dollop of gochujang and drizzle with sesame oil.


Step 4: Mix & Enjoy!

8️⃣ To eat, mix everything together so the flavors blend perfectly.
