Easy Breakfast Potatoes

Start your day with these Easy Breakfast Potatoes—crispy on the outside, tender on the inside, and seasoned to perfection. This simple recipe is a delightful addition to any morning meal.


Ingredients

  • 2 pounds Yukon Gold or red potatoes, diced into ½-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 small onion, diced; 1 bell pepper, diced
  • Fresh parsley or chives, chopped, for garnish

Instructions

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare Potatoes:
    • Place the diced potatoes in a large bowl.
    • Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper.
    • Toss until the potatoes are evenly coated with the oil and seasonings.
  3. Add Optional Vegetables:
    • If using, add the diced onion and bell pepper to the bowl with the potatoes and toss to combine.
  4. Arrange on Baking Sheet:
    • Spread the seasoned potatoes (and vegetables, if added) in a single layer on a large baking sheet.
    • Ensure there’s space between the pieces to allow for even roasting and crispiness.
  5. Roast:
    • Place the baking sheet in the preheated oven.
    • Roast for 20 minutes, then remove from the oven and flip the potatoes to promote even browning.
    • Return to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy on the outside and tender on the inside.
  6. Serve:
    • Remove from the oven and transfer the potatoes to a serving dish.
    • Garnish with chopped fresh parsley or chives, if desired.
    • Serve hot alongside your favorite breakfast dishes.

Tips and Variations

  • Parboiling for Extra Crispiness: For even crispier potatoes, consider parboiling the diced potatoes in salted water for 5-7 minutes before roasting. Drain well, then proceed with seasoning and roasting.
  • Seasoning Variations: Feel free to experiment with different herbs and spices, such as rosemary, thyme, or cumin, to suit your taste preferences.
  • Storage and Reheating: Leftover potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 375°F (190°C) for 10-15 minutes to restore crispiness.
