Ingredients

- 1 cup (125g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (100g) old-fashioned oats
- 3/4 cup (75g) grated carrots (about 2 medium carrots)
- 1/2 cup (50g) chopped walnuts or pecans (optional)
- 1/2 cup (75g) raisins (optional)

Instructions
- Preheat Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. - Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside. - Cream Butter and Sugars:
In a large mixing bowl, use an electric mixer to beat the butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). - Add Wet Ingredients:
Beat in the egg and vanilla extract until well combined. - Combine Ingredients:
Gradually mix the dry ingredients into the wet ingredients. Stir in the oats, grated carrots, nuts, and raisins until evenly distributed. - Scoop and Bake:
