Easy Carrot Cake Oatmeal Cookies Recipe

These Easy Carrot Cake Oatmeal Cookies are soft, chewy, and bursting with the classic flavors of carrot cake. Made with fresh carrots, warm spices, and a hint of sweetness, they’re the perfect snack or dessert! ????????


Ingredients

(Yields ~24 cookies)

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (100g) old-fashioned oats
  • 3/4 cup (75g) grated carrots (about 2 medium carrots)
  • 1/2 cup (50g) chopped walnuts or pecans (optional)
  • 1/2 cup (75g) raisins (optional)

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. Cream Butter and Sugars:
    In a large mixing bowl, use an electric mixer to beat the butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
  4. Add Wet Ingredients:
    Beat in the egg and vanilla extract until well combined.
  5. Combine Ingredients:
    Gradually mix the dry ingredients into the wet ingredients. Stir in the oats, grated carrots, nuts, and raisins until evenly distributed.
  6. Scoop and Bake:
    Drop tablespoon-sized scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  7. Cool:
    Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Optional Cream Cheese Glaze

Make these cookies extra special by drizzling them with a cream cheese glaze!

Ingredients:

  • 4 oz cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Instructions:
Beat all ingredients together until smooth. Drizzle over cooled cookies and let set before serving.
