Ingredients

For the Soup

  • 2 tbsp (30g) unsalted butter
  • 1 tbsp (15ml) olive oil
  • 1 medium onion (120g), diced

  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp paprika
  • 1/4 cup (30g) all-purpose flour
  • 1.5 liters (6 cups) chicken broth
  • 500g (1 lb) cooked chicken, shredded (rotisserie chicken works great!)
  • 250g (3 cups) egg noodles
  • 120ml (1/2 cup) heavy cream
  • 60ml (1/4 cup) whole milk
  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Sauté the Vegetables

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes until softened.
  3. Stir in garlic, salt, pepper, thyme, oregano, and paprika. Cook for 30 seconds until fragrant.

Step 2: Make the Base

  1. Sprinkle in flour and stir for 1 minute to create a light roux.
  2. Gradually pour in chicken broth, stirring constantly to avoid lumps.
  3. Bring to a gentle simmer and let cook for 10 minutes.

Step 3: Add the Chicken and Noodles

  1. Stir in shredded chicken and egg noodles.
  2. Simmer for 8-10 minutes until noodles are tender.

Step 4: Make it Creamy

  1. Reduce heat to low and stir in heavy cream and milk.
  2. Simmer for 2 more minutes, but do not boil.

Step 5: Serve & Enjoy!

  1. Taste and adjust seasoning if needed.
  2. Garnish with fresh parsley and serve warm.
