Introduction

There’s nothing quite like a bowl of warm, hearty chili on a chilly evening. Whether you’re feeding a crowd, meal prepping for the week, or just craving something cozy, this Easy Crockpot Chili Recipe is the ultimate set-it-and-forget-it meal.

This slow-cooked chili is loaded with ground beef, beans, tomatoes, and bold spices, all simmering together for hours to create deep, rich flavors. The best part? It requires minimal prep—just brown the meat, toss everything in the slow cooker, and let it work its magic!

Perfect for game day, potlucks, or a satisfying family dinner, this thick, flavorful, and protein-packed chili is a recipe you’ll want to keep on repeat.

Let’s dive in!

Ingredients (in Grams)

For the Chili:

  • 500g ground beef (or ground turkey for a lighter option)
  • 1 small onion (100g), finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper (100g), chopped
  • 1 can (400g) diced tomatoes, with juice
  • 1 can (400g) tomato sauce (or crushed tomatoes)
  • 1 can (400g) kidney beans, drained and rinsed
  • 1 can (400g) black beans, drained and rinsed
  • 200ml beef broth (or water)
  • 1 tablespoon tomato paste

Spices & Seasonings:

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon sugar (to balance acidity, optional)

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream or Greek yogurt
  • Sliced jalapeños
  • Chopped green onions
  • Fresh cilantro

Instructions

Step 1: Brown the Beef (Optional but Recommended)

  1. In a large skillet, heat a little oil over medium heat.
  2. Add the ground beef and cook until browned, breaking it up with a spoon.
  3. Drain excess fat and transfer the beef to the slow cooker.

(Skipping this step? Just add the raw beef directly to the crockpot and break it apart halfway through cooking.)

Step 2: Add Everything to the Crockpot

  1. To the slow cooker, add the onions, garlic, bell pepper, diced tomatoes, tomato sauce, tomato paste, and beef broth.
  2. Stir in the kidney beans, black beans, and all spices (chili powder, cumin, smoked paprika, oregano, salt, black pepper, cayenne, and sugar).
  3. Mix everything well so the flavors combine evenly.

Step 3: Slow Cook to Perfection

  1. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  2. Stir occasionally if possible, but it’s fine to leave it untouched.

Step 4: Taste & Adjust

  • Once the chili is done, taste and adjust the seasoning if needed. Add a pinch more salt, spice, or a splash of broth if it’s too thick.

Step 5: Serve & Enjoy!

  1. Ladle the hot, delicious chili into bowls.
  2. Top with shredded cheese, sour cream, green onions, jalapeños, or cilantro.
  3. Serve with cornbread, tortilla chips, or over rice for a filling meal.

Tips and Tricks

1. How to Thicken Chili?

  • If your chili is too thin, remove the lid during the last 30 minutes to let it simmer and thicken.
  • Stir in 1 tablespoon of cornmeal or mashed beans for a heartier texture.

2. Can I Make It Spicier?

  • Yes! Increase the cayenne pepper, add chopped jalapeños, or stir in hot sauce before serving.

3. Can I Use a Different Protein?

  • Swap ground beef for ground turkey, chicken, or even plant-based meat for a healthier alternative.

4. Best Beans for Chili?

  • Kidney beans, black beans, or pinto beans are classic, but feel free to mix and match!

5. How to Store & Freeze?

  • Fridge: Store leftovers in an airtight container for up to 4 days.
  • Freezer: Freeze chili in portions for up to 3 months.
  • Reheat: Thaw overnight and reheat on the stovetop or in the microwave.
