Easy Ground Beef Stroganoff

This Easy Ground Beef Stroganoff is a creamy, comforting one-pan dinner that’s perfect for busy weeknights. With hearty ground beef, tender egg noodles, and a rich mushroom cream sauce, it’s a family favorite!


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika (optional)
  • 3/4 cup sour cream
  • 12 oz egg noodles, cooked according to package directions
  • 2 tablespoons olive oil or butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Brown the Beef

  1. In a large skillet, heat olive oil or butter over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a wooden spoon. Season with salt and pepper. Remove the beef from the skillet and set aside.

Step 2: Sauté the Aromatics and Mushrooms

  1. In the same skillet, add the onions and cook for 3-4 minutes until softened.
  2. Add garlic and mushrooms, and sauté for another 5 minutes until the mushrooms release their juices and become golden.

Step 3: Make the Sauce

  1. Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1 minute.
  2. Slowly pour in the beef broth while stirring to avoid lumps.
  3. Add Worcestershire sauce, Dijon mustard, and smoked paprika (if using). Stir to combine and bring the mixture to a simmer.

Step 4: Combine the Beef and Sour Cream

  1. Return the browned ground beef to the skillet and stir well.
  2. Simmer the mixture for 5-7 minutes until the sauce thickens slightly.
  3. Reduce heat to low and stir in the sour cream until smooth and creamy.

Step 5: Serve

  1. Add the cooked egg noodles to the skillet and toss to coat in the sauce. Alternatively, serve the sauce over the noodles.
  2. Garnish with fresh parsley if desired and enjoy warm.

Notes

  • Make it lighter: Use Greek yogurt instead of sour cream for a lighter dish.
  • Add veggies: Mix in frozen peas or spinach at the end for added nutrients.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or microwave.
