This Easy Ground Beef Stroganoff is a creamy, comforting one-pan dinner that’s perfect for busy weeknights. With hearty ground beef, tender egg noodles, and a rich mushroom cream sauce, it’s a family favorite!
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika (optional)
- 3/4 cup sour cream
- 12 oz egg noodles, cooked according to package directions
- 2 tablespoons olive oil or butter
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)

Instructions
Step 1: Brown the Beef
- In a large skillet, heat olive oil or butter over medium heat.
- Add ground beef and cook until browned, breaking it apart with a wooden spoon. Season with salt and pepper. Remove the beef from the skillet and set aside.
Step 2: Sauté the Aromatics and Mushrooms
- In the same skillet, add the onions and cook for 3-4 minutes until softened.
- Add garlic and mushrooms, and sauté for another 5 minutes until the mushrooms release their juices and become golden.
Step 3: Make the Sauce
- Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1 minute.
- Slowly pour in the beef broth while stirring to avoid lumps.
- Add Worcestershire sauce, Dijon mustard, and smoked paprika (if using). Stir to combine and bring the mixture to a simmer.
Step 4: Combine the Beef and Sour Cream
- Return the browned ground beef to the skillet and stir well.
- Simmer the mixture for 5-7 minutes until the sauce thickens slightly.
- Reduce heat to low and stir in the sour cream until smooth and creamy.
Step 5: Serve
- Add the cooked egg noodles to the skillet and toss to coat in the sauce. Alternatively, serve the sauce over the noodles.
- Garnish with fresh parsley if desired and enjoy warm.
Notes
- Make it lighter: Use Greek yogurt instead of sour cream for a lighter dish.
- Add veggies: Mix in frozen peas or spinach at the end for added nutrients.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or microwave.
