Easy Homemade Beef Stew

Nothing beats a steaming bowl of homemade beef stew when you’re craving a warm, satisfying meal. This easy beef stew recipe is filled with tender chunks of beef, soft carrots, creamy potatoes, and a rich, savory broth that brings it all together. It’s the perfect family dinner — simple to prepare, affordable, and incredibly flavorful.

Whether you make it for a Sunday dinner or meal prep for the week, this stew delivers classic comfort food with minimal effort and maximum flavor.

Serves 6

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat (chuck roast, cut into cubes)
  • Salt and black pepper, to taste
  • 1/4 cup all-purpose flour (for coating beef)
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • 4 large carrots, peeled and sliced
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 1 cup frozen peas (added at the end)
  • Fresh parsley, chopped (optional garnish)

  1. Brown the Beef
    Pat the beef dry, season with salt and pepper, and toss in flour. Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.
  2. Sauté Veggies
    In the same pot, add a little more oil if needed. Sauté onion for 4–5 minutes until soft, then add garlic and cook 1 minute more.
  3. Build the Stew Base
    Stir in tomato paste, then deglaze the pot with a bit of broth. Scrape up all the brown bits. Return beef to the pot, add the rest of the broth, Worcestershire, thyme, rosemary, bay leaves, and bring to a simmer.
  4. Simmer Gently
    Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
  5. Add Veggies
    Stir in carrots, potatoes, and celery. Simmer uncovered for 30–40 minutes, until vegetables are fork-tender and the stew thickens.
  6. Finish
    Stir in peas during the last 5 minutes of cooking. Remove bay leaves, taste, and adjust seasoning.
  7. Serve
    Serve hot with crusty bread or over mashed potatoes. Garnish with fresh parsley if desired.
