Easy Ravioli Sauce

Ingredients (Serves 4)

Base Ingredients:

  • 2 tablespoons (30g) butter
  • 1 tablespoon (15ml) olive oil
  • 1 small onion (100g), finely diced
  • 3 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • ½ cup (120ml) heavy cream
  • ¼ cup (30g) grated Parmesan cheese
  • ½ cup (120ml) vegetable or chicken broth

Seasonings & Herbs:

  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
  • ½ teaspoon dried oregano

Optional Add-ins:

  • 1 tablespoon tomato paste (for extra richness)
  • ½ teaspoon sugar (to balance acidity)
  • ½ cup (100g) cooked ground sausage or pancetta

Instructions

Step 1: Sauté the Aromatics

  1. Heat butter and olive oil in a pan over medium heat.
  2. Add onion and sauté for 3-4 minutes until soft.
  3. Stir in garlic and cook for 30 seconds until fragrant.

Step 2: Simmer the Sauce

  1. Pour in crushed tomatoes, broth, tomato paste (if using), basil, oregano, salt, pepper, and red pepper flakes.
  2. Stir well and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally.
  3. Add sugar if needed to balance acidity.

Step 3: Add Cream & Cheese

  1. Lower the heat and stir in heavy cream and Parmesan cheese.
  2. Let it cook for 2-3 more minutes, until the sauce is smooth and creamy.
  3. Taste and adjust seasoning if needed.

Step 4: Serve with Ravioli

  1. Toss your cooked ravioli into the sauce, gently stirring to coat.
  2. Garnish with fresh basil and extra Parmesan.
  3. Serve immediately and enjoy! ????????
