Easy Taco Soup with Ranch

This Easy Taco Soup with Ranch is a one-pot wonder packed with bold flavors! Ground beef, beans, corn, and a medley of spices come together in a zesty, ranch-infused broth. Perfect for a cozy dinner or a crowd-pleasing party dish.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, undrained
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 (1 oz) packet taco seasoning
  • 1 (1 oz) packet ranch seasoning mix
  • 2 cups beef broth or chicken broth
  • Optional toppings: shredded cheese, sour cream, tortilla chips, diced avocado, chopped cilantro

Instructions

  1. Cook the Beef:
    • In a large pot or Dutch oven, brown the ground beef over medium heat. Add the diced onion and cook until softened. Drain any excess grease.
  2. Combine Ingredients:
    • Stir in the taco seasoning and ranch seasoning mix, coating the beef evenly.
    • Add black beans, pinto beans, corn, diced tomatoes with green chilies, diced tomatoes, and broth. Stir well to combine.
  3. Simmer the Soup:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20–25 minutes, stirring occasionally.
  4. Serve:
    • Ladle into bowls and top with your favorite toppings, like shredded cheese, sour cream, tortilla chips, or avocado.

Notes

  • For extra spice, add diced jalapeños or a pinch of red pepper flakes.
  • Swap ground beef for ground chicken or skip the meat for a vegetarian version.
  • Leftovers store well in the fridge for up to 3 days or can be frozen for up to 3 months.
